Directions:

Use a commercial yogurt maker or the following oven method. You will need a thermometer, a 3-liter saucepan and a 3-liter deep ovenproof container with a lid. For best results, use 2% or whole cow’s milk. Alternative milks, such as goat and soy, may require more total solids.

  1. Pour 2 liters of your favorite milk into a large saucepan. Heat milk slowly over a low flame to at least 82°C. DO NOT BOIL. Maintain this temperature for at least 5 min.
  2. Allow milk to cool to 42°C-44°C.
  3. Place 1-2 level teaspoons of Yogurt Starter in a 3-liter ovenproof container. Add 2 tablespoons of the lukewarm milk and make a smooth paste. Continue to add milk a small amount at a time, blending thoroughly after each addition until all milk is used.
  4. Place container with lid in oven, wrap container in a thick towel. Let stand for about 8hrs at approximately 42°C-44°C.

做法:

使用商业用优格制器或以下的烤炉法。你需要一个温度计、3公升的平底锅、3公升的有盖玻璃或塑料容器。欲达到最佳效果,请用2%或全脂牛奶。也可用羊奶或豆奶。

  1. 将2公升的奶倒入平底锅,以小火慢慢加热到82°C。不可煮沸。维持此温度至少5分钟。
  2. 让奶降温至42°C-44°C。
  3. 在3公升的容器中放入1-2茶匙的优格粉,加入2汤匙的温奶搅成糊状。继续逐步加入少分量的温奶,每次混合均匀直到用完全部温奶。
  4. 将容器盖好放在烘炉里,保持温度42°C-44°C,存放8小时后即可。若没有烘炉,也可用干净的毛巾或面巾将容器包好,约8小时,或直到优格凝结即可。
